Chocolate Filled Sugar Cookie Sandwich

Soft and delicious sugar cookie sandwiches with a thick chocolate ganache filling! An excellent sweet bite sized treat!

These cookies are my youngest boy’s all time favorite cookie. It all starts with a super soft mini sugar cookie and it’s filled with an amazing chocolate ganache for a mouthwatering flavor combo.

The bite sized shape make these the perfect sweet snack or fun and fast family dessert. The cookie recipe is quick and same with the homemade chocolate ganache filling.

You get about eight servings and all in about 45 minutes from start to serve.

Because they are so easy and tasty I make these for bday parties, family get togethers and last minute guests. They always impress and they usually don’t last long!

How To Make Chocolate Filled Sugar Cookie Sandwiches

Most sugar cookies are HUGE but I make these a bit smaller so they make a perfect sized sandwich. And the ganache is the perfect filling for the chocolate lovers out there. While you can use a buttercream style filling with these cookies, I really enjoy the ganache.

Cookie Ingredients

  • 3 Egg Yolks
  • 1 Cup Butter
  • 1 1/4 Cups Granulated Sugar
  • 2 1/2 Cups All-Purpose Flour
  • 1 tsp. Baking Soda
  • 1 tsp. Pure Vanilla Extract
  • 1/2 tsp. Cream of Tartar

Chocolate Ganache Filling Ingredients

  • 2 Cups Heavy Cream
  • 2 Cups Semi-sweet Chocolate Chunks

You will start by making your filling. Chop your semi-sweet chocolate chunks and place in mixing bowl. Don’t use chips as they tend to have additives that mess with the ganache setting.

In a sauce pan bring your heavy cream to a boil. As soon as it comes to a boil, remove from heat and pour into chocolate chunks.

Let the mixture sit for two minutes and then whisk until creamy. Chill in your refrigerator until ready to spread on cookies.

Next begin preparing your sugar cookies by preheating your oven to 350 degrees.

Take your baking sheets and grease them.

In bowl combine butter and granulated sugar. Mix well.

While mixing add in your vanilla extract and egg yolks. Continue to mix and add in your baking soda, cream of tartar and flour. Mix until well blended.

Take your firm cookie dough and form half tablespoon sized balls and place on greased baking sheets. Leave a couple inches of space between dough balls.

Bake for about ten minutes. Cookies are done when just turning light brown and the tops crack.

Remove from oven and cool completely on wire rack.

Once cool, take out your chocolate ganache and fill your sugar cookie sandwiches.

  • Let mixture stand for two minutes.
  • Whisk by hand until creamy. Chill in refrigerator until ready to spread on cookies.

Sugar Cookies

  • Preheat oven to 350 degrees.
  • Grease your baking sheets.
  • Combine butter and granulated sugar. Mix well.
  • While mixing, add vanilla extract and egg yolks. Combine well.
  • Add flour, baking soda, and cream of tartar while mixing. Blend well.
  • Form half tablespoon sized dough balls and place on greased baking sheets. Leave a couple inches of space between dough balls.
  • Bake for about ten minutes. Cookies are done when just turning color and cracks begin to form.
  • Remove and cool completely on wire racks.
  • Once cool, take out chocolate ganache and spread on cookie and put sandwiches together.
