These are like little pie crust cookies perfect for dunking in your morning coffee. They are super quick and easy to make and a great dessert to let the kids lend a hand in making.
I love serving these when my friend comes over on Saturday morning. They are the perfect little sweet treat for munching while hanging out.
I usually bust these out around the holiday season when I’m baking a lot of pies but they are great year round treats.
I tend to make dunking strips but sometimes I will cut out fun holiday themed shapes. It doesn’t add any time to prep and kids really like helping cut out the shapes with me.
How To Prepare Sugar and Cinnamon Pie Crust Cookies

Cookie Ingredients
- Pie Dough (leftover, from scratch, or store bought all work great)
- Unsalted Butter
- Ground Cinnamon
- Granulated Sugar
- Pinch of Salt
Vanilla Dipping Sauce Ingredients
- Whole Milk
- Pure Vanilla Extract
- Confectioners Sugar
Cookie Instructions
Start out by preheating your oven to 350 degrees.
Use parchment paper to line your baking sheet.
In the refrigerator, chill your pie crust dough for about twenty minutes if not already chilled.
Dust your working surface with flour and roll out your dough to about 1/8″ thick.

Cut two inch by four inch strips out of your dough. For fun shapes, use cookie cutters use those instead.
Combine sugar and cinnamon in bowl.
Melt your butter and brush on both sides of each cookie.
Roll each cookie in sugar and cinnamon mixture and place on cookie sheet in a single layer.
Bake until golden brown. Usually takes about twenty minutes, depending on size and thickness.
Remove cookies and allow to cool on wire rack.
Vanilla Dipping Sauce Instructions
- Combine all ingredients in mixing bowl.
- Whisk by hand until well combined.

- 4 Tbs. Unsalted Butter
- ½ Cup Granulated Sugar
- 3 tsp. Ground Cinnamon
- Pinch Salt

- 1 Cup Confectioners Sugar
- 1 tsp. Pure Vanilla Extract

- Preheat oven to 350 degrees.
- Line baking sheet with parchment paper.

- Use a little flour to dust working area.
- Roll out pie crust dough with rolling pin till it's about 1/8" thick.
- Cut out 2"x4" strips. If making shapes, cut out with cookie cutters.
- Combine sugar and cinnamon in a bowl.
- Melt butter and brush on to both sides of each cookie.
- Roll cookies in sugar and cinnamon mixture. Place on baking sheet.
- Bake until golden brown (about twenty minutes).
- Remove and cool on wire rack.
