The aroma and flavor is exceptional, and the flavor of fresh blueberries go perfectly with coffee cake. The combo is so good, I am confident this will be one of your new favorite recipes as well.

The great thing about this recipe is in spite of being homemade, it’s super easy to put together. You’ll also find a great icing recipe, but this coffee cake is so good you can make it without the topping as well.

How to Make Homemade Coffee Cake with Fresh Blueberries

This recipe doesn’t require a lot of kitchen time. Prep is under ten minutes and bake time right around forty, so you can have homemade coffee cake in under an hour!

As for equipment, I use a couple large mixing bowls (one for the icing), hand or stand mixer, and a square, glass baking dish (8″ or 9″).

And that’s all you need!

Ingredients Needed for Making Blueberry Coffee Cake from Scratch

While making your coffee cake from scratch requires a few more ingredients than using a premade mix, the results are well worth the couple extra minutes it takes to prepare.

And on top of that, all you’re going to need are common baking ingredients. So there’s a decent chance you have everything you need stocked in the kitchen already.

Coffee Cake Ingredients

  • Fresh Blueberries
  • Granulated Sugar
  • Shortening
  • Milk
  • Egg
  • All-Purpose Flour
  • Baking Powder
  • Salt

Coffee Cake Icing Ingredients

  • Brown Sugar
  • Granulated Sugar
  • Ground Cinnamon
  • Butter (softened)
  • All-Purpose Flour

Simple Step by Step Instructions

You’re going to be surprised how easy it is to make this coffee cake from scratch. The steps are quick, and even though it’s not fancy, this recipe packs a tremendous flavor punch.

So, once you have all your ingredients gathered, it’s time to start baking!

Step 1: Preheat your oven to 350 degrees

Step 2: Grease baking dish

Step 3: Rinse your blueberries and remove any stems

Step 4: In your mixing bowl, add 3/4 cup of granulated sugar and shortening and blend with your mixer

Step 5: Add your dry ingredients and mix until well blended

Step 6: Gently ford in your blueberries

Step 7: Add all your icing ingredients to your second mixing bowl

Step 8: Mix until well combined

Step 9: Pour topping over your coffee cake batter

Step 10: Bake in preheated oven for 45-50 minutes

Step 11: Cool, serve and enjoy!

  • 1 Pint Fresh Blueberries rinsed
  • ¾ Cup Granulated Sugar
  • ¼ Cup Shortening
  • 1 Large Egg
  • ½ Cup Milk

  • ½ tsp Salt

Topping

  • Cup All-Purpose Flour
  • ½ tsp Ground Cinnamon
  • ¼ Cup Brown Sugar packed
  • ¼ Cup Granulated Sugar
  • ¼ Cup Butter softened

Instructions
