How to Make Homemade Coffee Cake with Fresh Blueberries

This recipe doesn’t require a lot of kitchen time. Prep is under ten minutes and bake time right around forty, so you can have homemade coffee cake in under an hour!
As for equipment, I use a couple large mixing bowls (one for the icing), hand or stand mixer, and a square, glass baking dish (8″ or 9″).

While making your coffee cake from scratch requires a few more ingredients than using a premade mix, the results are well worth the couple extra minutes it takes to prepare.

- Granulated Sugar
- Shortening
- Milk

- Brown Sugar
- Granulated Sugar
- Ground Cinnamon
- Butter (softened)

Simple Step by Step Instructions

You’re going to be surprised how easy it is to make this coffee cake from scratch. The steps are quick, and even though it’s not fancy, this recipe packs a tremendous flavor punch.
So, once you have all your ingredients gathered, it’s time to start baking!
Step 1: Preheat your oven to 350 degrees
Step 2: Grease baking dish
Step 3: Rinse your blueberries and remove any stems
Step 4: In your mixing bowl, add 3/4 cup of granulated sugar and shortening and blend with your mixer
Step 5: Add your dry ingredients and mix until well blended
Step 6: Gently ford in your blueberries

Step 7: Add all your icing ingredients to your second mixing bowl
Step 8: Mix until well combined
Step 9: Pour topping over your coffee cake batter
Step 10: Bake in preheated oven for 45-50 minutes

- 1 Pint Fresh Blueberries rinsed
- ¾ Cup Granulated Sugar
- ¼ Cup Shortening
- 1 Large Egg
- ½ Cup Milk

Topping
- ⅓ Cup All-Purpose Flour
- ½ tsp Ground Cinnamon
- ¼ Cup Brown Sugar packed
- ¼ Cup Granulated Sugar
- ¼ Cup Butter softened
Instructions
- Preheat your oven to 350 degrees
- Grease baking dish
