Incredibly easy lemon pudding cookie recipe that is packed with flavor. A great cookie to serve as a tasty snack or at any get together.
This is one of the recipes my family made all the time when I was growing up. And between the great flavor and simplicity it’s still a regular cookie recipe me and my family make.
I love the fresh, lemony flavor and with only needing a few simple ingredients, it’s just a great all around recipe.

Note: While I do add lemon zest, you can make these cookies without it. It just adds a great, fresh flavor that tastes absolutely delicious.

How to Make Simple Lemon Pudding Mix Cookies

This is one of the quickest cookie recipes I make. Prep time is literally just a few minutes and bake time is under ten.
It’s a great last minute recipe to serve to guests or for that party you forgot you had to bring a dessert to.

Lemon Pudding Cookie Ingredients

The great thing about this recipe is that we use pudding mix and Bisquick, which cuts down a ton on how many ingredients we need.
And just because it’s quick and easy doesn’t mean we are sacrificing on flavor. In fact, just by adding a little lemon zest, we really elevate the flavor of these cookies.
Ingredient List
- Bisquick
- Lemon Pudding Mix
- Vegetable Oil
- Egg
- Lemon Zest (optional)
Lemon Pudding Mix: I’ve used both Jell-O brand as well as store brand, and all of them have produced great results. Go with whatever brand you prefer.
Bisquick: By using Bisquick we avoid combining three other ingredients. It’s a great time saver, and the texture it produces is excellent.
Vegetable Oil: While you can use butter (or margarine) or your other favorite baking oil, I’ve found the best results come from using vegetable oil.

Stir Ins

While this recipe is excellent as is, it’s also a great base for any of your favorite cookie stir ins. I don’t add other flavors to my cookies often but I’ve had friends tell me they love all sorts of interesting flavor combinations.
Feel free to add 1/2-1 cup of your favorite cookie stir ins with no other recipe changes.

Step by Step Recipe Instructions

So this recipe is seriously quick to get in the oven. There are just a few simple steps making it one of my personal favorite last minute dessert.
Once you have your ingredients gathered, it’s time to bake some cookies!
Step 1: Preheat oven to 350 degrees
Step 2: In a large mixing bowl, add all your ingredients
Step 3: Stir by hand until well blended
Step 4: Roll your cookies into 1″-2″ balls and place on ungreased cookie sheet. Leave a couple inches between cookies
Step 5: Using your palm, flatten each cookie
Step 6: Bake in preheated oven for 8-9 minutes
Step 7: Remove cookies from oven and cool on a wire rack
Step 8: Serve and enjoy!

- 1 3.4 oz pckg Lemon Pudding Mix
