Fluffy Microwave Pancakes (Fast Recipe)

Fluffy soft pancakes super fast made in the microwave! This simple recipe is the fastest and tastiest way to make pancakes.

So cooking in the microwave can produce lightening quick results, but it can be challenge making a breakfast that tastes edible (let alone amazing) but with the right ingredients and technique it’s absolutely possible to make pancakes in the microwave.

With some fairly standard pancake ingredients, grease proof baking paper, and a microwave safe plate and you are well on your way to super fast and light and fluffy pancakes.

How To Make Easy Pancakes In The Microwave

Since these pancakes are so easy to make, you will have time to dress them up anyway you want. They go great with good old fashion maple syrup and butter but why not add some Nutella?

Or maybe peanut butter and fresh jam? No matter how you top them they are super fluffy and so soft you might trick some people into thinking they came right off the griddle.

Your prep time will be just a few minutes and your cook time only two! This is enough to serve my family of four. If you need more (or less) just use the handy ingredient calculator below.

Ingredients

  • 1 Cup All-Purpose Flour
  • 1 tsp. Baking Powder
  • 2 Tbs. Salted Butter (melted)
  • 1 Large Egg
  • 1 tsp. Granulated Sugar
  • 4 Tbs. Vegetable Oil
  • 3/4 Cup Half and Half (can substitute milk)

In a mixing bowl, stir together your flour, baking powder, and sugar. Then add in your melted butter, egg, vegetable oil, and half and half.

Whisk together until creamy and well blended.

Put a sheet of your non grease paper on your microwave safe plate. Add about two tablespoons of batter on top of it.

Place another sheet of paper on top of your batter (don’t press down on it) and pour another layer of batter.

Do this until you have four or five pancake layers.

Pop them in the microwave and cook them for two to three minutes on high.

Remove add toppings and enjoy!

  • Place a sheet of grease proof paper on microwave safe plate. Add two tablespoons of batter on paper.
  • Place another sheet of paper on batter. Add another layer of batter. Continue until you have four or five layers.
  • Microwave on high for two to three minutes.
  • Remove, add desired toppings and serve immediately.
