How To Make Ice Cream Without Sweetened Condensed Milk

Out of all the ice cream recipes I make, this is one of the easiest! Just four ingredients and no ice cream machine to get in the way of your creamy vanilla ice cream.
Ingredients
- 4 Large Pasteurized Eggs (Separated)
- 1 Cup and 3 Tbs. Heavy Cream
- 1/3 Cup Sugar
- 1 Tbs. Pure Vanilla Extract
- 1 tsp. Lemon Juice
Prep time will take about twenty five minutes and chill is at least six hours. All you need is basic kitchen equipment and you will get about six servings from this recipe.
Using a hand or stand mixer beat egg whites. Gradually add your granulated sugar while mixing. Continue to blend until stiff peaks are formed.
Pour your mixture into a freezer safe dish with a cover. Set aside.
In a separate bowl add your egg yolks, lemon juice, and pure vanilla extract. Whisk by hand until blended and set aside.
In a separate mixing bowl add your heavy cream and mix until stiff peaks form.
Pour your yolk mixture into your cream and fold it in. Then add it to your egg white mixture and fold it in.
Do not use your mixer for folding. And fold gently until you don’t see any more streaks in your ice cream.
Cover in freezer safe container and chill in your freezer for at least six hours.

No Churn Vanilla Ice Cream Without Condensed Milk

Ingredients
- 4 Large Pasteurized Eggs Separated

- 3 Tbs. Heavy Cream
- ⅓ Cup Granulated Sugar
- 1 Tbs. Pure Vanilla Extract
- 1 tsp. Lemon Juice
Instructions
- Add egg whites to mixing bowl. With hand or stand mixer, beat your egg whites. Gradually add your granulated sugar and mix until stiff peaks form.
- Pour into freezer safe container and set aside.
- In separate bowl add egg yolks, lemon juice, and pure vanilla extract. Whisk by hand until well blended.
- In separate bowl add heavy cream and mix until stiff peaks form.
- Add yolk mixture to cream. Gently fold it in.
- Add it to your egg white mixture and gently fold it in.
- Cover in freezer safe dish and chill in your freezer for at least six hours.
