Wonderful Pecan Dream Cookies Recipe

I remember visiting my aunt’s bakery and watching her put her Pecan Dream Cookies on display. They were so delicious and they have always been one of my favorite traditional cookie recipes.

They go by pecan dreams, Russian Teacakes, and even Mexican Wedding Cookies but no matter what you call them, these buttery cookies are the perfect amount of sweet and nut.

I recall these being particularly popular around the Christmas season in my aunt’s shop but I love making these year round. They just remind me of home and they have such a wonderful flavor.

How to Make Pecan Dream Cookies

These pecan cookies have a delightful crunch and a buttery inside. The flavor is so good without being overly sweet. It makes them a great dessert or snack and they always get eaten so fast around my home.

Prep time is quick and only take about twenty-five minutes. And a single batch will make a little over two dozen cookies.

Pecan Dream Cookie Ingredients

  • 2 Cups All-Purpose Flour
  • 4 Tbs. Granulated Sugar
  • 2 Sticks Unsalted Butter
  • 1 Cup Pecans
  • 2 tsp. Pure Vanilla Extract
  • 1 Cup Powdered Sugar

Preheat oven to 300 degrees.

Using a hand or stand mixer combine sugar and butter on medium speed until well mixed. Then mix on high until mixture is light and creamy.

Mix in your vanilla extract and then add flour and crushed pecans. Mix until well blended.

Next hand roll a heaping teaspoon of cookie dough into a ball.

Place on an ungreased cookie sheet and continue until all cookies have been rolled.

Bake for about thirty minutes. Cookies are done when lightly brown on the bottom.

Remove cookies from oven.

Cool cookies for about three or four minutes.

Take each cookie one at a time and roll them in powdered sugar and place them on a sheet of wax paper.

Once they have completely cooled, roll them in powdered sugar one more time each.

Cookies are ready to serve!

Ingredients
  

Pecan Dream Cookies

  • 2 Cups All-Purpose Flour
  • 2 Sticks Unsalted Butter
  • 4 Tbs Granulated Sugar
  • 2 tsp Pure Vanilla Extract
  • 1 Cup Ground Pecans
  • 1 Cup Powdered Sugar

Instructions
 

  • Preheat oven to 300 degrees.
  • Add butter and sugar to mixer and combine on medium speed until well combined. Mix on high speed until mixture becomes light and creamy.
  • Mix in vanilla extract.
  • Add in pecans and flour and mix until blended.
  • Roll cookie dough by hand into one and a half inch balls. Place on ungreased cookies sheet.
  • Bake for thirty minutes. Cookies are done when they are light brown on the bottom.
  • Remove from oven and cool for four minutes.
  • Roll each cookie in powdered sugar and place on wax paper.
  • Once completely cooled, roll each pecan cookie in powdered sugar again.
  • Serve and enjoy!
