Equipment

  • Blender
  • Frying Pan

Ingredients
  

  • 4 oz Egg Beaters
  • 3 tbs Vegetable Oil
  • 1 1/3 cups Milk
  • 1 cup All-Purpose Flour
  • 1/2 tsp Salt

Instructions
 

  • Put all your ingredients into your blender. Blend for twenty to thirty seconds. Take a spatula and scrape down the sides of the blender container and blend again for a few seconds.
  • Spray your frying pan and bring it to medium low heat. Once pan is brought up to temperature put a half tablespoon of batter in your pan. Tilt your pan in a circular motion. The batter should move around freely. Remove your test batter.
  • Add two to three tablespoons of your cholesterol free crepe batter to the heated pan. It should be just enough to create a thin coating. Cook time will be about one minute per side. Once the first side is firm enough to flip, use your spatula to flip it. Your crepes are done once there are light brown flecks.

Notes

Egg beaters can be substituted with your favorite cholesterol free egg substitute.
If your crepes are sticking to the pan add more cholesterol free cooking spray or margarine.

Conclusion

Your batter can be made ahead of time. It refrigerates well for up to three days. Finished crepes can be frozen and enjoyed later. Simply store in freezer safe bags and place in your freezer.

Put them in the fridge the day before you want to have them. Simply heat quickly on low heat in a frying pan and serve.
