Easy and delicious pancake recipe using muffin mix
I love fun and simple breakfast recipes and these muffin mix pancakes are so easy to make!
This recipe is really versatile too. There are so many different muffin mixes that will work with this recipe that the possibilities are almost endless.
They take only three ingredients and are super quick to whip up! That makes them perfect for those busy mornings when you don’t have time for a lot of cooking. All you need to make great pancakes is an egg, some milk, and your favorite bag of muffin mix.
My favorite brand to use is Betty Crocker. They come in so many delicious flavors like cinnamon streusel, chocolate chip, banana nut, wild blueberry, triple berry, and cornbread.
Other great brands that make muffin mix perfect for this recipe are Martha White, Krusteaz, and Stonewall Kitchen.
I like to use a couple 7 oz. packages for my family. That will yield you about 16-20 pancakes.
These pancakes also take add ins very well. Some of my family’s favorite add ins are fresh fruit, nuts, vanilla extract, and chocolate ganache, and even flax seed.
How to make pancakes with muffin mix

Ingredients
- 1 Cup Whole Milk
- 2 Large Eggs
- 2 6-7 oz. Packages of Muffin Mix
To start heat up your skillet to medium low heat.
While your pan is coming to temperature, add your milk, eggs, and muffin mix to a mixing bowl.
Whisk by hand until well combined.
Pour about two tablespoons of pancake batter per pancake to skillet and cook until bubbles form on surface of pancake. This should take a couple minutes.
Flip your pancake and cook second side until it is golden brown.
Repeat until all pancakes are cooked.
Top with maple syrup or your favorite pancake toppings, serve hot and enjoy.

Simple Muffin Mix Pancakes

Ingredients
- 1 Cup Whole Milk
- 2 Large Eggs
- 2 Packages Muffin Mix 12-14oz total
Instructions
- Heat skillet to medium low.
- Add milk, eggs, and muffin mix to a mixing bowl. Whisk by hand until well combined.
- For each pancake pour about 2 tablespoons of batter to pan.
- Cook first side until bubbles form on pancake surface. About 2 minutes.
- Flip and cook second side until pancake is golden brown.
- Repeat until all batter has been used.
- Add desired toppings and serve hot.

- Add ins can be stirred into batter before cooking
