I’ve been baking these cookies since I was a little girl with my mom and I haven’t altered the recipe at all. You can’t improve on perfection as they say.
Every time I bite into one of these delightfully soft cookies I get the feeling I am tasting a combination of a soft baked cookie and a gooey fudge brownie. It’s truly a dream come true for the rich chocolate cookie lover and it’s one of my favorite soft baked cookie recipes hands down.
You will notice the difference as soon as your prepare your dough. It falls between the consistency of brownie batter and cookie dough. You will bake no better cookie for the absolute chocolate lover.
How To Make Soft Top Chocolate Dream Cookies

Prep time is only about fifteen minutes and start to serve is less than a half hour. These delectable chocolate cookies are perfect for last minute desserts and party treats. Clean up is simple and they are so delicious the kids won’t mind lending some help.
And best of all, other than the instant espresso all ingredients are likely already in your pantry.
Soft Top Chocolate Dream Cookie Ingredients
- 2 Large Eggs
- 6 oz. Semi sweet chocolate chips (melted)
- 2 Tbs. Whole Fat Milk
- 2 Tbs. Unsalted Butter
- 1/3 Cup Granulated Sugar
- 1/3 Cup Brown Sugar
- 1 Cup All-Purpose Flour
- 1/4 Cup Unsweetened Cocoa Powder
- 1 tsp. Pure Vanilla Extract
- 1/2 tsp. Baking Powder
- 1 1/2 Cups Semi Sweet Chocolate Chips or Chunks
- 1 tsp. Instant Espresso Powder
- 1/4 tsp. Salt
- Flaky Sea Salt for Topping (optional)
Instructions
Start by preheating your even to 350 degrees and line your cookie sheet with parchment paper.
In a small saucepan melt your butter and 6 oz. of chocolate chips stirring constantly. Mixture should be smooth and creamy. Let chocolate cool before moving on.
Add in your granulated sugar, brown sugar, eggs, and pure vanilla extract and mix well.
Using a hand whisk, combine cocoa powder, baking powder, flour, espresso powder and salt until well blended. Mix with melted chocolate until blended.
Add in the rest of your chocolate chips and stir until evenly distributed.
Place three tablespoon heaps of cookie dough onto parchment paper lined cookie sheet. Using the palm of your hand, slightly flatten your cookies.
Bake for ten to twelve minutes. When done, cookies will still be soft but set. Remove from oven and top with sea salt. Cool completely and then serve.

- 2 Large Eggs

- 1 Cup All-Purpose Flour
- ¼ Cup Unsweetened Cocoa Powder
- ½ tsp. Baking Powder
- ¼ tsp. Salt
- 1 tsp. Instant Espresso Powder
- 1½ Cups Semi Sweet Chocolate Chips or Chunks
- Flaked Sea Salt for Topping optional

- . Allow to cool before mixing in the eggs, milk, granulated sugar, brown sugar, and vanilla.Use a large 3-tablespoon cookie scoop to place the batter on the prepared baking sheets. Flatten slightly. Bake for 10 to 12 minutes, or until set but still gooey. Sprinkle with sea salt, if desired. Allow to cool before serving.In a medium bowl whisk together the flour, sifted cocoa powder, baking powder, salt, and espresso powder. Add the flour mixture into the chocolate mixture and stir until just combined. Gently stir in the chocolate chips.

- Place three tablespoon sized drops onto parchment paper lined cookie sheet. Leave two inches between each cookie.
- With palm of your hand slightly flatten each cookie.
- Bake for ten to twelve minutes. Cookies will still be soft when done but set.
- Sprinkle with flaked sea salt and allow to cool completely before serving.
