Tasty Chili Verde Crepes

Tasty Chili Verde Crepes

If you are looking for a tasty and zesty chili verde crepe this is the recipe for you!

I’ve been tweaking my family chili verde recipe over the years to cater it to my family’s specific tastes and I think this turns out absolutely wonderfully.

It doesn’t take long to prepare and it works great as a light dinner or hearty brunch. I’ve also served this crepe dish at get togethers and it always wows my attendees.

The ingredients just create such a powerful flavor combo and it doesn’t cost much either!

I use my corn chip crepes for the base but a classic crepe will work as well.

Instructions

Corn Chip Crepes

  • Combine all crepe ingredients in your blender. Cover and process for thirty to forty seconds. Scrape down the sides of your container with a spatula and process for a few more seconds. Crepe batter should be smooth and consistent.
  • Spray your frying pan and bring it to medium low heat.
  • Test your batter by pouring a half tablespoon of batter in your heated pan. Tilt your pan in a circular motion. Your batter should move around your pan freely. If it doesn't lower your heat a touch. Once it does remove test batter from pan.
  • For each of your corn chip crepes, add three to four tablespoons of batter to your heated pan. Batter should thinly coat the bottom of your pan. Heat for about one minute. Crepe is ready to flip once it can be lifted without breaking.

Conclusion

My boys absolutely love spicy crepes so I really kick up the heat on these chili verde crepes. If you like them a bit milder they still taste wonderful with all these amazing flavors coming together just perfectly.

They do take a little longer to prepare than many of the crepes I make but the longer prep time is well worth it. And being under an hour start to serve, they really don’t take that long anyway.

I love using fresh green chili when in season but this dish is also tasty using canned chilis.

If you plan to make these for a get together meal, make sure to at least make a double batch as they go fast.
