  • Blender or Food Processor
  • Crepe Pan or Medium Skillet
  • Mixing Bowl
  • Hand or Stand Mixer

  • 2 Large Eggs
  • 2 Tbs. Unsalted Butter Melted
  • 1 Cup Sour Cream
  • ½ Cup Milk
  • 1 Cup Sifted Cake Flour All-Purpose Flour can be substituted
  • 2 Tbs. Granulated Sugar
  • 2 Tbs. Brandy Optional
  • Dash Salt

  • Fresh Strawberries Halved
  • Bananas Sliced
  • 2 Cups Heavy Cream

Whipped Cream

  • Add heavy cream to mixing bowl. Mix on high until stiff peaks form.
  • Chill in refrigerator until ready to use.

  • Add all crepe ingredients to blender or food processor. Process on high for about thirty seconds.
  • Scrape down sides of container and process for another twenty seconds or until well blended.
  • Spray pan with non stick spray and heat to medium low.
  • Add a tablespoon of batter to pan to test. Tilt pan in a circular manner. Batter should move around the pan freely. Discard test batter.
  • For each crepe add enough batter to pan to create a thin coating of the pan bottom.
  • Cook each side for about one minutes. Crepe is ready to flip when small bubbles form on it's surface.
  • To flip. Lightly loosen the edge of crepe all around pan with a thin spatula. Lift edge enough to grasp crepe with finger (be careful not to burn yourself) and flip in one quick motion.
  • Cook the second side until bottom begins to show light brown. Remove from pan and add filling. Repeat until all crepe batter has been used.

Putting Crepes Together

  • Spread desired amount of Nutella on one side of crepe. Add strawberry and banana and cream and then fold crepe.
  • You can add topping and filling if desired.
  • Serve immediately and enjoy!

  • Be careful when flipping crepes. They are hot so you can use your spatula if desired.
  • Filling can be used in any order you wish. I like to put Nutella and fruit on inside. Top with cream and more fruit.
  • Batter can be stored for up to two days before using.
  • Cooked crepes can be frozen (without topping or filling) in a freezer safe container.
