Add granulated sugar and vegan butter to mixing bowl and mix until creamy.
Add pure vanilla extract and egg and combine well.
Add flour, baking soda, and salt. Mix until fully combined.
Dust your working area with flour and press your dough into a disk. Cover in plastic wrap and chill in the refrigerator for 30 minutes.
Toward the end of your 30 minutes, preheat your oven to 350 degrees.
Add dough back to floured work area and roll it out to desired cookie thickness.
Cut out shapes and place cookies on parchment paper lined baking sheet.
Bake for 9-10 minutes.
Cool on wire rack and decorate with desired topping.
