Chili Verde Crepes

Corn Chip Crepes

  • 2 Eggs
  • 2 tbs Vegetable Oil
  • 1 Cup Milk
  • Cup Water
  • ½ Cup All-Purpose Flour
  • 1 Cup Corn Chips Crushed
  • ½ tsp Salt

Chili Verde Crepe Filling

  • 1 tbs Butter
  • ½ Cup Finely Chopped Onion
  • 2 Cups Cubed Cooked Pork
  • 4 oz Diced Green Chilis with Juice
  • 1 tsp Salt
  • ¼ tsp Fresh Ground Pepper
  • ¾ Cup Water
  • 1 tbs Melted Butter
  • 1 tbs Flour
  • 3-4 Drops Hot Pepper Sauce
  • To Taste Grated Monterey Jack Cheese
  • Cilantro For garnish


Corn Chip Crepes

  • Combine all crepe ingredients in your blender. Cover and process for thirty to forty seconds. Scrape down the sides of your container with a spatula and process for a few more seconds. Crepe batter should be smooth and consistent.
  • Spray your frying pan and bring it to medium low heat.
  • Test your batter by pouring a half tablespoon of batter in your heated pan. Tilt your pan in a circular motion. Your batter should move around your pan freely. If it doesn't lower your heat a touch. Once it does remove test batter from pan.
  • For each of your corn chip crepes, add three to four tablespoons of batter to your heated pan. Batter should thinly coat the bottom of your pan. Heat for about one minute. Crepe is ready to flip once it can be lifted without breaking.
  • Cook the second side of your corn chip crepe for one minute. It is done cooking when light brown spots begin to form. Remove from pan and repeat until all crepes are made.

Chili Verde Crepe Filling

  • Preheat your oven to 375 degrees.
  • In your skillet, melt butter and add onion. Sauté until onions are soft.
  • Add cooked pork to skillet along with chilis and juice, salt, pepper, and water.
  • Bring to a boil. Cover and simmer over medium heat for twenty-five to thirty minutes. Your mixture should be thickened. Add hot pepper sauce to taste.
  • Blend melted butter and flour. Gradually stir into skillet mixture. Remove from heat.
  • Add filling to each crepe. Fold or roll each crepe and set seem side down on oven safe serving dish.
  • Pour remaining sauce on top of crepes and sprinkle with cheese.
  • Bake for ten to fifteen minutes.
  • Garnish with cilantro, serve immediately and enjoy!


    • Make sure pork is cooked completely before adding to skillet.
    • This dish can be spicy or mild depending on personal preference. 
    • Batter can be prepared ahead of time. Refrigerate for up to three days.
