  • 1 8" or 9" Glass Baking Dish
  • 1 Stand Mixer or Hand Mixer
  • 2 Mixing Bowls

Ingredients
  

Coffee Cake

  • 1 Pint Fresh Blueberries rinsed
  • ¾ Cup Granulated Sugar
  • ¼ Cup Shortening
  • 1 Large Egg
  • ½ Cup Milk
  • 2 Cups All-Purpose Flour
  • 2 tsp Baking Powder
  • ½ tsp Salt

Topping

  • Cup All-Purpose Flour
  • ½ tsp Ground Cinnamon
  • ¼ Cup Brown Sugar packed
  • ¼ Cup Granulated Sugar
  • ¼ Cup Butter softened

Instructions
 

  • Preheat your oven to 350 degrees
  • Grease baking dish
  • Rinse your blueberries and remove any stems
  • In your mixing bowl, add 3/4 cup of granulated sugar and shortening and blend with your mixer
  • Add your dry ingredients and mix until well blended
  • Gently ford in your blueberries
  • Note: Topping instructions begin
  • Add all your icing ingredients to your second mixing bowl
  • Mix until well combined
  • Pour topping over your coffee cake batter
  • Bake in preheated oven for 45-50 minutes
  • Cool, serve and enjoy!
