I like to spice mine up but it works great with a milder touch as well.

How to Make Corn Chip Crepes from Scratch
These crepes are just as easy to make as a standard recipe, with a quick prep and cook time.
The only equipment you need is a blender or mixer and a frying pan.
If using a mixing bowl and mixer make sure to crush your corn chips before mixing them into your batter. The easiest method is to put your corn chips in a plastic bag, seal it, and use a rolling pin to crush them into a fine powder.
If using a blender, simply process your corn chips with the rest of your ingredients.

Making corn crepes from scratch doesn’t require a bunch of complicated ingredients. In fact, you may already have everything you need to make them on hand.

- Corn Chips
- All-Purpose Flour
- Eggs
- Vegetable Oil
- Milk
- Water
- Salt
Corn Chips: If using a blender, just process them with the rest of your ingredients. But when using a hand mixer, you will need to crush your chips into a fine powder before mixing them in. Any brand of regular corn ships will do.
Vegetable Oil: If you do not want to use vegetable oil, there are multiple other options. You can use melted butter, coconut oil, or olive oil.
Flour: All-Purpose flour produces a light and fluffy texture, but cake or wheat flour can be used in a pinch. Wheat flour does produce a crispy crepe though.

If you’ve made any of my other crepe recipes (search at the top of this page for more recipes) then this recipe will look familiar.
While the ingredients are different, the process is the same. That’s one of my favorite things about serving crepes, they are quick and easy to make.
Step 1: Put all your ingredients into your blender. Process until well blended. Usually takes about thirty to forty seconds. Scrape your blender with your spatula and then blend again for a few seconds.
Step 2: Spray your frying pan and bring your heat to medium low.
Step 3: Pour about a half a tablespoon of batter into your heated frying pan. Tilt your pan in a circular motion. Your batter should move freely around the pan. Remove test batter from pan.
Step 4: Add about three or four tablespoons of batter to your heated pan. Cook the first side for approximately one minute.
Step 5: Once your crepe is firm enough, flip it to the other side.
Step 6: Cook the second side until there are light brown flecks.
Step 7: Remove from pan and repeat until all batter is used.
Step 8: Add your favorite Mexican style fillings and then serve and enjoy!
