For this recipe you will be using common baking ingredients, so there’s a good chance you already have everything you need on hand.
This zucchini bread is light and moist and the flavors come together just perfectly! You will see that you can add walnuts for a more interesting texture and a wonderful nutty flavor.
But, if you aren’t a big fan of nuts, they are totally optional. Just make sure to adjust the amount of raisins used depending on if you make your loaf with or without walnuts.
If adding walnuts, use a half cup of raisins, but go with a full cup of raisins if not incorporating walnuts in your zucchini bread.

All-Purpose Flour: This is the foundation for our bread, but if you are all out, or looking for a gluten free alternative you can use your favorite flour alternative. Keep in mind that gluten free flours tend to produce a flatter loaf of zucchini bread. But the flavor will still be great.
Granulated Sugar: If you would like a less sweet recipe, reduce the amount of granulated sugar by 1/2-1 cup.
Raisins: Remember to use a half cup of raisins when also adding walnuts, and to go with one cup of raisins when not using walnuts.
